Red Meatless Monday

I haven’t posted about Meatless Monday in awhile but the idea is still going strong.  Usually I make something completely vegetarian but today I had to bend the rules a slight bit because of a sale at Publix.  Wild Alaskan Salmon - never frozen was on sale for $9.99/lb!  I baked it with a simple honey mustard glaze…delish!  To make a simple glaze - use equal parts honey and grainy mustard and add olive oil until you like the consistency.  My husband loved dinner tonight and that is the best feeling.

Funny thing though…I live in Florida so I know that Salmon had to come from many, many miles away.  Granted, we eat it once a year only when it is fresh and the health benefits of wild salmon are well circulated but I still felt slightly guilty eating my Alaskan treat in sunny and humid Florida.  I guess health is important too!

 

PS:  What a difference in taste between wild caught never frozen salmon and the farmed, frozen stuff.  The wild stuff did not taste nearly as strong/fishy to me…yummy!
